India Society of Worcester, one of New England’s most vibrant Indian Association launched a new monthly seminar series for communities in Central Massachusetts. Seminars, offered free of admission fee, will be held 4th Friday of every month at India Center located at India Center (152 Main Street in Shrewsbury, MA). Attendees do not need to be members of India Society of Worcester. Seminar series will have several tracks beginning with Finance, Health, Society & Culture and Family. Seminars will begin with two different formats - in some cases with a keynote speaker and sometimes seminars will be held with a panel of experts discussing, debating two sides of an issue. Next Seminar: Saturday November 17th - Food, Nutraceuticals and Genes Consumers seldom think of the vast array of foods and the research and development that has resulted in tasty, nutritious, safe, and convenient foods. In USA, food is plentiful and we have the safest food supply. However, it has also resulted in perhaps some unintended consequences such as obesity and other food related diseases. It is now well known the four out of top six diseases that result in death are food related. On the other hand we also now know how natural chemicals (nutraceuticals) in some foods interact with our genes and may give us protection from chronic diseases. This seminar will focus on variety of topics related to food including food processing, nutraceuticals, food-gene interactions, nutrition facts, and recent trends. Food Science is the discipline in which biology, physics, chemistry, and engineering are used to study the nature of foods, the causes of their deterioration, and the principles underlying food processing.Food technology is the application of food science to the selection, preservation, processing, packaging, distribution, and use of safe, nutritious, and wholesome food. A food scientist studies the physical, microbiological, and chemical makeup of food. Depending on their area of specialization, food scientists may develop ways to process, preserve, package, or store food, according to industry and government specifications and regulations. ![]() Dr. Mukund V. Karwe, Ph.D. in Mechanical Engineering from Rutgers University. is currently a Professor of Food Engineering and the Acting Chair of the Department of Food Science at Rutgers University. He is also the coordinator of an industrial project on Health Promotion and Safety in Processed Foods. He has done extensive research in the area of mathematical modeling and numerical simulation of transport phenomena in food manufacturing processes such as cereal & pasta extrusion and baking. His current research projects involve effect of processing on health promoting nutraceuticals in quinoa, buckwheat, amaranth, and cranberries. His other research areas include non-thermal food processing to preserve food quality and fortification of foods with omega-3 fatty acids. One of his current projects involves application of high pressure in food processing. Dr Karwe has published over 100 papers, research articles and co-edited the book Food Extrusion Science and Technology. He teaches graduate and undergraduate courses in Food Engineering at Rutgers University where he has won several awards for excellence in teaching and research. Mukund was born and raised in Thane, Maharashtra, India. He obtained his B.Tech. in Mechanical Engineering from IIT Bombay. About India Society of Worcester A Volunteer run non-profit cultural and religious organization, ISW provides community service through several activities in central mass communities. It offers, in partnership with Indian Medical Association of New England (IMANE), a free health stop every Wednesday night at India center to provide the needed health care for the under served and uninsured in our community. ISW, since its establishment in 1963, offers a window into cultural heritage of India through yearly program called India Day that is attended by thousands from Worcester, Shrewsbury, Westborough, Northborough and other surrounding communities. ISW’s Youth Group does community service at food shelters during thanksgiving and go out Caroling during Christmas.
